If you like classy and functional, then this 9" Gyuto might just be the knife for you. The blade is forged from 52100 (High Carbon Ball Bearing Steel) and features a strong distal taper and a wide bevel grind. This way I was able to retain a lot of the forge finish without compromising the geometry of the blade (not chunky at all). The handle is made from a bolster of Elforyn Supertusk, an Ivory substitute, and Tigerwood. This timber is very dense and has got an amazing depth of color that seems impossible to capture in an image.
